Potassium Metabisulfite

Potassium Metabisulfite is widely used as a winemaking agent that kills wild yeast and bacteria.  It helps to clear the way for your yeast, allowing it to do its job better.  Sulphites help inhibit enzymatic browning in white wines and improve flavor, when used correctly.  This additive is mixed into the must or juice prior to the addition of yeast.  According to Wikipedia, you should use approximately 1/4 teaspoon per six gallon bucket of must.  If you are concerned with sanitation at bottling, then consider the addition of 1/2 tsp. per six-gallon bucket at bottling.  Potassium metabisulfite is an excellent sanitizer.  This additive is often available in tablet form also and that form is known as Campden Tablets.  This packet is sufficient for approximately 90 gallons of wine depending upon whether it is used solely at the initial stage or if it is also used at bottling.
